Showpiece Homes, Luxury Living… and Gourmet Cuisine
Like most top chefs, Marbella supremo Dani García welcomes the opportunity to indulge in simple culinary pleasures when away from his Michelin-star restaurant. In an interview with a Villa Marbella Now colleague as his rising fame was starting to gain an international dimension, he revealed that at home he and his family ate “very normal food” – the previous night, for example, they had enjoyed a serving of tortellini.
He added that his favourite ingredients were tomatoes and almonds and – if he had to choose a preferred dish between fish and meat – it would be fried boquerones (anchovies). As for the most exotic product he had ever tasted? “One of the strangest things I liked eating was in Peru, guinea pig. They call them cuy but they’re actually guinea pigs. Incredible! They raise them in their homes, and look after them – until they eat them. It’s like a mini suckling pig.”
He concluded, “Because I like to eat, and I like everything, that reflects itself a lot in the cuisine. It’s a positive thing. To cook well, you have to know how to cook well and to like eating. In the end your cuisine reflects your personality.”
It could be said that the contents of a chef’s refrigerator also shine an illuminating light on their personality. This, in fact, is one of the key pretexts behind a new book written by food writer Adrian Moore and photographed by Carrie Solomon, “Inside Chefs’ Fridges”.
The authors toured the European continent, profiling 40 of Europe’s top chefs (with nearly 60 Michelin stars shared between them) alongside their personal home fridges. According to the publishers (Taschen), “The result is a revelation, through images and words, of the inner sanctum of culinary creativity, with each chef revealing their dependable fridge contents.”
Recalls Solomon, “The fly-by-the-seat-of-their-pants chef had a haphazard home fridge with good products (a few past their expiration date) but unorganised, and made us a totally improvised, interesting recipe in two minutes. Others, known for their meticulousness in the kitchen and on the plate, left nothing to chance in their home fridge. Only the most exquisite products, all carefully presented as in their restaurants.”
Moore and Solomon shared with the New York Times 10 of the most surprising products they had found while working on “Inside Chef’s Fridges”:
-A home-made tortilla from his mother-in-law (Joan Roca, El Celler de Can Roca, Spain)
-Pickled marigold flowers (Magnus Nilsson, Faviken, Sweden)
-Fermented daikon juice (Sang-Hoon Degeimbre, L’Air du Temps, Eghezée, Belgium)
-Frozen flies (Rasmus Kofoed, Geranium, Copenhagen)
-Frozen ortolans (Yves Camdeborde, Le Comptoir du Relais Saint-Germain, Paris)
-Poisonous gyromitre mushrooms (Sébastien Bras, Laguiole, France)
-Old birthday cake (Christian F. Puglisi, Relae, Copenhagen, Denmark)
-Moroccan absinthe leaves (Fatéma Hal, Le Mansouria, Paris)
-An unused bottle of Kikkoman soy sauce that follows the chef from apartment to apartment (Daniel Achilles, Berlin, Germany)
-Mare’s milk (Adeline Grattard, Yam t’cha, Paris)
